You're Gonna Love It Tuesday

And, we meet again! So, those that didn't get the cold and snow last week, are you getting it this week?  We here in the Denver area have brought out the shorts and flip flops again as we bask in the tropical 40's today! Hey, we take what we can here this time of year lol!

Orange In Your Stocking Cocktail

Orange In Your Stocking Cocktail
When I was young, I remember my brothers and I sneaking down the stairs on Christmas morning, before mom and dad were awake, to see if Santa had stopped by our house yet. We weren't allowed to open any gifts until the parents got up, but we could take a peek into our stockings. As sure as Santa is real, at the very bottom, in the toe if you will, we'd find one beautiful orange. I never knew why, but it was tradition. Now that I am all grown up, relatively speaking, the new tradition is to have an adult beverage nearby as we open gifts.  That is where this cocktail comes in. Orange In Your Stocking pays homage to memories gone by. An easy drink with just enough Sunkist Orange Soda zip to enjoy at the holidays, from Christmas to New Years Eve.

Orange In Your Stocking Cocktail Recipe
1.5 oz Vanilla Vodka
1.5 oz Heavy Cream
4 oz Sunkist Orange Soda
For this batch, I used this fun Shaker I had received from Canada Dry.

Pour the vodka and heavy cream, along with some ice, into the shaker. Give it a couple of light shakes and pour into a glass. Top with the Sunkist Orange Soda and stir lightly. You can make it kid friendly too just by leaving out the vodka.

Happy party day once again! I believe a vast majority of you are like me and shivering in the "Polar Vortex - The November 2014 Edition"!  The past weekend was beautiful here!  Sunshine and unseasonably warm temps. Then *BAM* Hello Winter!  The good news is, my dear mother-in-law has sold her home and we were blessed with that great weather to get her stuff moved into storage and her moved in with us for the time being.  After the first of the year, we will start looking for a new home for her closer to us. We are already planning our first tablescape collaboration together!!

You're Gonna Love it - Anything Goes

Hello dear friends!  I hope the end of October and the beginning of November finds you fit and happy?  All is well with me!  The next few weeks are gonna be cray cray and you may see less of me for a bit but, not to worry!  I am still around!  I'll fill you in on all of the deets once all is said and done. Pinky swear.

Easy Weeknight Meal With Daisy Cottage Cheese

I am always on the look out for healthy snacks and meals.  One of my MUST HAVES in the fridge is a big ole carton of Daisy Cottage Cheese.

Nothing satisfies my snack cravings while watching TV at night like a small bowl of cottage cheese with a cut up banana in it. I also pack some everyday in with my lunch to have with my salad at work. I love that Daisy Cottage Cheese is jammed full of protein. The 2% cottage cheese (my all time fave FYI!) has 13 grams of protein and only 90 calories per 1/2-cup serving. It’s a great way to enjoy low-fat,  100% natural cottage cheese without giving up the oh so creamy, delicious taste. I also love that Daisy Cottage Cheese is 100% pure! This means there are no additives, preservatives, or added growth hormones in their cottage cheese. It's just naturally good.

I've also been incorporating Daisy Cottage Cheese in some of my recipes. This quick and healthy Weeknight Spaghetti Pie is the perfect meal to get on the table fast any night of the week!
Daisy Cottage Cheese Spaghetti Pie Recipe
Weeknight Spaghetti Pie
6 ounces spaghetti
2 Tablespoons butter
1/3 Cup grated Parmesan cheese
2 well beaten eggs
1 pound ground beef
1 Jar Spaghetti Sauce
1 cup Low Fat Daisy Cottage Cheese 
4 Slices Provolone Cheese

Preheat oven to 350 degrees.
Cook the spaghetti in salted boiling water, drain.
Stir butter into hot spaghetti. Stir in Parmesan and beaten eggs. Form spaghetti mixture into a "crust" in a buttered 10 inch round baking dish.
Brown ground beef in a large skillet.  Drain. Stir in spaghetti sauce. 
Spread cottage cheese over the spaghetti crust in the baking dish. Pour and spread the hamburger mixture over the cottage cheese. Top with the provolone cheese slices. Bake uncovered in a 350 degree oven for 20 minutes or until bubbly and cheese has started to brown.

Slice and serve with a salad for a healthy fast meal.
